Fresh basil can be used instead of dried; simply increase the amount to 2 tablespoons, and add it towards the end of the sauce simmering time. Feel free to customize the cheeses to your preference. Provolone or a blend of Italian cheeses would also work well. If you don’t have stewed tomatoes, you can use crushed tomatoes with a pinch of sugar and a teaspoon of Italian seasoning. To save time, you can microwave the squash halves instead of baking them. Microwave on high for 10-15 minutes, or until tender, then let cool before handling.
