Prepare the Tortilla: Lay tortillas flat on a clean work surface. (2 minutes)

Add Fillings: Spread refried beans down the middle third of each tortilla, from top to bottom, leaving a 1-inch gap halfway down to allow for folding. Sprinkle shredded cheese evenly over the beans, gently pressing it into the beans. (5 minutes)

Fold the Tortilla: Fold the left side of the tortilla over the beans, then fold the right side on top, overlapping the left side in the middle. Now, fold the tortilla in half vertically, bringing the bottom edge to meet the top edge. (3 minutes)

First Toast: Place the folded quesadillas into the toaster slots. Set the toaster to medium heat and toast for one cycle. (2-3 minutes)

Reverse and Toast Again: Carefully remove the quesadillas (they will be hot!). Gently unfold the vertical fold, so the inside becomes the outside. Return the quesadillas to the toaster and toast until lightly browned, approximately half a toasting cycle. (1-2 minutes)

Serve: Carefully remove the hot quesadillas from the toaster to a plate. Cut each quesadilla in half along the fold to create four pieces. Serve immediately.

Don't overstuff the toasterdillas! Too many fillings can cause a mess and prevent them from toasting properly.
Experiment with different fillings like cooked chicken, veggies, or different cheese blends.
Serve with your favorite toppings like sour cream, salsa, guacamole, or pico de gallo.
