In a large bowl, whisk together granulated sugar, eggs, 1/4 cup flour, lemon juice, baking powder, and lemon zest until smooth and well combined. Pour the lemon mixture over the cooled crust. (5 minutes)

Bake in the oven until the custard is set, about 25-28 minutes. The center should be slightly jiggly but not liquid. (30 minutes)

Let the lemon squares cool completely in the baking dish before cutting into squares. Dust generously with confectioners' sugar before serving. (60 minutes)

For a more intense lemon flavor, increase the lemon zest and juice to your liking. Be careful not to add too much juice, or the custard may not set properly.
Make sure your butter is very cold for the crust. This will help create a flaky, tender shortbread.
Allow the lemon squares to cool completely before cutting. This will prevent them from crumbling and ensure a clean cut.
Store leftover lemon squares in an airtight container in the refrigerator for up to 3 days.
