In a large saucepan or Dutch oven, combine the beef chunks, beef broth, and water. Bring to a boil over high heat, then reduce heat to medium, cover, and simmer until the beef is nearly tender, about 1 to 1 1/2 hours.

Stir in the polenta, potatoes, and onion. Cover and simmer for 15 minutes.

Add the pumpkin, corn, carrot, bell pepper, celery, and leek. Simmer until the vegetables are tender, adding more water if needed to barely cover, about 20-25 minutes. Stir in the oregano and paprika during the last 5 minutes.

Season to taste with salt and pepper. Ladle into serving bowls, and sprinkle with chopped cilantro.

For a richer flavor, sear the beef chunks in a little olive oil before adding the broth and water.
Feel free to adjust the vegetables based on your preference and what's in season. Other great additions include green beans, peas, or squash.
If you don't have fresh oregano, you can substitute 1/2 teaspoon of dried oregano.
For a spicier stew, add a pinch of red pepper flakes along with the paprika.
The stew can be made ahead of time and reheated. The flavors will meld together even more beautifully overnight.
