In a bowl, stir together the shredded coconut, brown sugar, whole wheat flour, cinnamon, and salt. Add the cooked quinoa and beaten eggs to the coconut mixture; stir until everything is completely combined. (5 minutes)

Drop the quinoa mixture by the tablespoonful into the prepared mini-muffin cups. (5 minutes)

Bake in the preheated oven until the bites are slightly crisp and golden brown. (15-20 minutes)

For a richer flavor, try toasting the shredded coconut lightly before adding it to the mixture.
