Follow The Directions

01

Step

Prepare the Egg and Rice: Lightly coat a skillet with cooking spray and set over medium heat. Scramble the eggs until just set, about 3-5 minutes. Divide the cooked rice between two serving bowls and top with the scrambled eggs.

02

Step

Prepare the Aromatics: Finely mince the Thai chile peppers and garlic. You can use a mortar and pestle for a traditional approach or a food processor for convenience.

03

Step

Sauté Aromatics and Chicken: Coat the same skillet with cooking spray and heat over medium-high heat. Add the minced chile peppers and garlic; cook until fragrant and the garlic is lightly golden, about 1 minute. Add the chicken pieces and stir-fry until they are about halfway cooked, approximately 3 minutes.

04

Step

Add Sauce and Basil: In the skillet, combine the soy sauce, oyster sauce, and sugar with the chicken. Continue to cook and stir until the chicken is cooked through and no longer pink inside, about 3 minutes. Stir in the fresh Thai basil leaves and cook for about 10 seconds, until they begin to wilt. Remove from heat and continue stirring until fully wilted.

05

Step

Serve: Spoon the Thai basil chicken mixture over the rice and egg in each bowl. Garnish with sliced cucumber and tomato for a refreshing contrast.

Adjust the amount of Thai chile peppers to control the spiciness of the dish.
For a richer flavor, marinate the chicken in a mixture of soy sauce and a little cornstarch for 15-20 minutes before cooking.
If you don't have Thai basil, regular basil can be substituted, though the flavor will be slightly different.
Jasmine rice is recommended for its fragrant aroma, but any type of cooked rice will work.

I didn't have Thai basil on hand, so I used regular basil, and it was still delicious.
