Follow The Directions

01

Step

In a food processor, pulse sandwich cookies until finely ground, resembling sand. Add cream cheese, pumpkin puree, pumpkin pie spice, and salt. Continue processing until a smooth, pliable dough forms, scraping down the sides as needed. (5 minutes)

02

Step

Using a spoon or cookie scoop, portion the dough into approximately 20 equal servings (about 1 tablespoon each) on a parchment-lined baking sheet. Freeze for 10-12 minutes, or until firm enough to handle. Roll each portion into a smooth ball. Return to the freezer for another 8-10 minutes to firm up further. (25 minutes)

03

Step

In a microwave-safe bowl, melt white chocolate chips in 30-second intervals, stirring in between, until completely melted and smooth. (2 minutes)

04

Step

Dip each pumpkin spice ball into the melted white chocolate, using two forks to ensure full coverage. Allow excess chocolate to drip off before placing the truffle back onto the parchment-lined baking sheet. (15 minutes)

05

Step

Let the truffles cool to room temperature before garnishing with melted chocolate, caramel, or an extra dusting of pumpkin pie spice. Refrigerate until ready to serve. (1 hour)

For best results, ensure the cream cheese is fully softened to avoid lumps in the dough.
If the white chocolate is too thick, add a teaspoon of vegetable oil to thin it out.
Store truffles in an airtight container in the refrigerator for up to a week.
Experiment with different toppings! Chopped nuts, sprinkles, or a dusting of cocoa powder would all be delicious.
