Follow The Directions

01

Step

In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Italian seasoning, minced garlic, salt, and pepper until well emulsified. (5 minutes)

02

Step

In a large bowl, gently combine the drained cannellini beans, garbanzo beans, mozzarella pearls, diced red bell pepper, diced red onion, chopped pepperoncini, julienned salami, and optional capicola.

03

Step

Pour the vinaigrette dressing over the salad mixture. Gently toss to ensure all ingredients are evenly coated.

04

Step

For optimal flavor, cover and refrigerate for at least 30 minutes before serving. This allows the flavors to meld and deepen. (30 minutes)

For a vegetarian option, omit the salami and capicola and add marinated artichoke hearts.
Feel free to adjust the amount of pepperoncini to suit your spice preference.
This salad keeps well in the refrigerator for up to 3 days. The flavors intensify over time.
If you don't have mozzarella pearls, you can substitute cubed fresh mozzarella.
A drizzle of balsamic glaze can add a touch of sweetness and complexity.
