Follow The Directions

01

Step
5 mins

Combine all ingredients in a high-powered blender or food processor. (5 minutes)

02

Step
5 mins

Blend until completely smooth, scraping down the sides as needed. The consistency should be a thick paste. (5 minutes)

03

Step
2 mins

Taste and adjust seasonings as desired. Add more brown sugar for sweetness, lime juice for tang, or Scotch bonnet pepper for heat. (2 minutes)

04

Step
2 mins

Use immediately as a marinade or condiment, or store in an airtight container in the refrigerator for up to 2 weeks. (2 minutes)

For a milder sauce, remove the seeds and membranes from the Scotch bonnet peppers before blending. You can also substitute with milder peppers like jalapenos.
If you don't have fresh thyme, you can use 1 tablespoon of dried thyme.
This sauce is excellent with grilled chicken, pork, fish, or vegetables. Try marinating your protein for at least 2 hours, or up to overnight, for maximum flavor.
For a smoother sauce, strain it through a fine-mesh sieve after blending.
The peanut oil can be substituted with other neutral oils like canola or vegetable oil.

This recipe is fantastic! The perfect balance of sweet, spicy, and savory. I marinated chicken overnight, and it was incredibly flavorful.

I was a little intimidated by the Scotch bonnets, but I seeded them and the sauce was perfect. My family loved it!

Easy to follow and delicious. I added a little more ginger because I love the flavor. Will definitely make again.
