Remember that dried chiles tend to be spicier than fresh ones. If you can't find Kashmiri garam masala, use a regular garam masala and add a pinch of smoked paprika for a similar depth of flavor. Serve with basmati rice or naan bread to soak up the delicious gravy. A dollop of raita (yogurt sauce) can also complement the dish beautifully. For nut-free dish, simply omit the almonds.
