In a large bowl, combine the peeled and cubed potatoes with the remaining 3 coarsely chopped onions. Working in batches, fill the bowl of a food processor with the potato and onion mixture, along with 1 egg per batch. Process until smooth, then transfer to a large bowl. Repeat until all potatoes and onions have been processed. Season generously with ground black pepper. Stir in the cooked salt pork and onion mixture, ensuring it's evenly distributed. Gradually blend in the flour, using just enough to absorb some of the moisture – the batter should remain slightly loose. (Prep time: 25-30 minutes)
