Using a tablespoon or a small cookie scoop, drop rounded mounds of batter about 2 inches apart onto the prepared baking sheets. Gently shape each mound into a football shape. (10 minutes)

Bake for 12-15 minutes, or until the tops spring back lightly when touched. (15 minutes)

Transfer the whoopie pies to a wire rack to cool completely. (15 minutes)

While the cakes are cooling, prepare the filling. In a medium bowl, using an electric mixer, beat together butter, powdered sugar, marshmallow cream, and 2 teaspoons vanilla extract until smooth and fluffy, about 3 minutes. (5 minutes)

Once the cakes are completely cool, spread a generous tablespoon of filling on the flat side of half of the cakes. Top with the remaining cakes to form sandwiches. (10 minutes)

To decorate with football laces, transfer remaining filling to a piping bag or a plastic bag with a small corner snipped off. Pipe laces onto the tops of the whoopie pies. Sprinkle with white crystal sugar for extra sparkle, if desired. (10 minutes)

For best results, ensure the butter is properly softened but not melted. This will contribute to a light and airy texture in both the cakes and the filling.
Do not overmix the batter, as this can result in tough whoopie pies. Mix until just combined.
The whoopie pies can be stored in an airtight container at room temperature for up to 3 days.
