Follow The Directions

01

Step

Preheat oven to 375 degrees F (190 degrees C). Spray 10 muffin cups with cooking spray. (5 minutes)

02

Step

Whisk 1 1/2 cups sifted whole wheat flour with baking soda, baking powder, salt, and 1/2 teaspoon cinnamon in a large bowl. (2 minutes)

03

Step

Mix together mashed bananas, 1/2 cup melted unsalted butter, egg, white sugar, and vanilla extract in a separate bowl. (3 minutes)

04

Step

Gently fold banana mixture into dry ingredients just until moistened; do not overmix. (2 minutes)

05

Step

Spoon batter into prepared muffin cups, filling them about 3/4 full. (3 minutes)

06

Step

Mix dark brown sugar with 2 tablespoons whole wheat flour and 1/2 teaspoon cinnamon in a bowl, stirring until combined; mash 1 tablespoon unsalted butter into the mixture with a fork until streusel topping resembles crumbs. (5 minutes)

07

Step

Sprinkle topping over muffins. (1 minute)

08

Step

Bake muffins in the preheated oven until a toothpick comes out clean or with moist crumbs, about 20 minutes. (20 minutes)

For an extra nutty flavor, add 1/2 cup of chopped walnuts or pecans to the batter.
Store muffins in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
If you don't have whole wheat flour, you can substitute with all-purpose flour.
Make sure your bananas are very ripe for the best flavor and moisture.
