Preheat oven to 350°F (175°C). Lightly coat a 10x15-inch baking dish with nonstick cooking spray.

Heat a large skillet over medium heat. Add sausage and onions; cook, breaking up the sausage with a spoon, until sausage is browned and onions are softened, about 5-7 minutes. Add mushrooms and continue cooking until softened and lightly browned, about 5 minutes. Remove from heat and drain any excess grease.

Place spinach in a microwave-safe bowl. Microwave, uncovered, for 3 1/2 minutes, or until wilted. Gently squeeze out excess moisture. In a medium bowl, combine the wilted spinach, ricotta cheese, and beaten egg. Stir until well blended.

In a separate medium bowl, whisk together the Alfredo sauce and milk until smooth.

Spread about 1/2 cup of the Alfredo sauce mixture evenly over the bottom of the prepared baking dish. Arrange 3 no-boil lasagna noodles over the sauce. Spread 1/2 of the spinach mixture over the noodles, followed by 1/2 of the sausage mixture. Sprinkle with 1/3 of the mozzarella cheese. Repeat layers: 3 noodles, 1 1/2 cups Alfredo sauce mixture, remaining spinach mixture, remaining sausage mixture, and another 1/3 of the mozzarella cheese. Top with the final 3 noodles and pour the remaining Alfredo sauce mixture evenly over the top. Sprinkle with the remaining mozzarella cheese.

Spray a sheet of aluminum foil with nonstick cooking spray and cover the dish tightly, sprayed-side down.

Bake in the preheated oven for 45 minutes. Remove the aluminum foil and continue to bake until noodles are tender and lasagna is bubbly, about 10-15 minutes more. Let rest for 10 minutes before serving.

For a richer flavor, use whole-milk ricotta cheese.
Feel free to add other vegetables, such as bell peppers or zucchini, along with the mushrooms.
If you prefer a milder flavor, use sweet Italian sausage instead of hot.
To prevent the top from browning too quickly, you can cover the lasagna with foil again during the last few minutes of baking.
