Preheat oven to 375 degrees F (190 degrees C).

In a medium roasting pan (approximately 9x13 inches), combine the diced sweet potato, carrot, and sliced onion. Drizzle with olive oil, season generously with salt and pepper, and toss until vegetables are evenly coated.

Roast in the preheated oven for 20 minutes, or until vegetables are slightly softened.

Remove the roasting pan from the oven. Using a fork, gently prick each sausage round. Arrange the sausage pieces on top of the partially roasted vegetables, nestling them in amongst the sweet potatoes and carrots.

Return the roasting pan to the oven and continue to roast for another 20 minutes, or until the sausages are cooked through and no longer pink in the center, and the vegetables are tender and slightly caramelized. An instant-read thermometer inserted into the center of a sausage round should read 165 degrees F (74 degrees C).

Remove from oven. Squeeze the roasted garlic cloves from their skins over the top of the vegetables and sausage. Serve immediately.

For extra flavor, try adding a pinch of smoked paprika or red pepper flakes to the vegetables before roasting.
Feel free to substitute other root vegetables like parsnips or turnips for the sweet potato or carrot.
Italian sausage or chorizo would also work well in place of the kielbasa.
If you like, toss the vegetables with a tablespoon of balsamic vinegar after the first 20 minutes of roasting for added depth of flavor.
