Beat the mixture: Place the top pot over the simmering water, ensuring the bottom doesn't touch the water. Using an electric mixer, beat the mixture on medium-high speed until stiff, glossy peaks form. This will take approximately 5 to 7 minutes.

Continue beating: Continue beating the frosting with the electric mixer for an additional 3 minutes, allowing it to cool slightly and become even more stable and luscious.

For best results, ensure your egg whites are at room temperature. This will help them whip up to a greater volume.
Be patient during the beating process; stiff peaks are essential for a stable frosting.
If you don't have a double boiler, you can create one by placing a heatproof bowl over a saucepan of simmering water.
Feel free to adjust the amount of coffee to suit your taste preferences. A bit of instant espresso powder can also be added for a bolder coffee flavor.
This frosting is best used immediately but can be stored in the refrigerator for up to 24 hours. Re-whip before using.
