Follow The Directions

01

Step
5 mins

Lightly grease a 9-inch pie plate to prevent sticking. (5 minutes)

02

Step
20 mins

In a small bowl, combine the finely chopped peanuts, melted margarine, and sugar. Mix thoroughly until evenly moistened. Press the mixture firmly onto the bottom and up the sides of the prepared pie plate to form a cohesive crust. Cover the crust with plastic wrap and refrigerate for 15 minutes to set. (20 minutes)

03

Step
20 mins

In a large bowl, blend together the peanut butter and light corn syrup until smooth. Add the flaked coconut and chopped peanuts; mix well to combine. Gently fold in the softened vanilla ice cream until just combined, being careful not to overmix. Spoon the peanut butter ice cream mixture into the chilled crust, spreading evenly to fill. Smooth the top with a spatula or spoon. (20 minutes)

04

Step
8 hrs

Cover the pie tightly with plastic wrap or foil to prevent freezer burn. Freeze until completely firm, ideally 8 hours to overnight. (8 hours)

05

Step
5 mins

Before serving, remove the pie from the freezer and let it sit at room temperature for a few minutes to soften slightly. Sprinkle the top with mini candy-coated chocolate pieces for added color and crunch. Slice and serve immediately, or return to the freezer for later enjoyment.

For a richer flavor, toast the peanuts before chopping and adding them to the crust.
Feel free to experiment with different toppings! Toasted coconut, chocolate shavings, or a drizzle of hot fudge would all be delicious.
If you don't have margarine, melted butter works just as well.
Ensure the ice cream is softened but not melted for optimal mixing.

So easy to make and tastes amazing. I used a graham cracker crust to save some time.
