Follow The Directions

01

Step
1 mins

In a blender, combine the diced pineapple, egg yolks, sugar, lemon juice, cornstarch, and salt. Blend until completely smooth, ensuring no chunks remain. (Approximately 1 minute)

02

Step
5 mins

Pour the mixture into a heavy-bottomed saucepan. Cook over medium heat, whisking constantly to prevent scorching. Continue whisking until the curd thickens to a pudding-like consistency. (3-5 minutes)

03

Step
1 mins

Remove the saucepan from the heat. Immediately whisk in the cold, cubed butter until it is fully melted and incorporated, creating a glossy and smooth curd.

04

Step
2 hrs

Transfer the pineapple curd to a clean bowl. Cover the surface directly with plastic wrap to prevent a skin from forming. Refrigerate for at least 2-3 hours, or until fully chilled and set.

For a smoother curd, strain the mixture through a fine-mesh sieve after blending but before cooking.
The curd will continue to thicken as it cools, so don't overcook it on the stovetop.
Store leftover pineapple curd in an airtight container in the refrigerator for up to 5 days.
