Using the Saute mode on high heat, heat 2 tablespoons of olive oil in a 6-quart electric pressure cooker. Working in batches, cook the pork until lightly browned on all sides. (Cook time: 5-6 minutes per batch)

Place a tall trivet inside the pressure cooker, positioning it above the pork. Carefully place the bowl of uncooked rice on the trivet. Lock the lid and set the valve to 'Seal.' Select high pressure according to the manufacturer's instructions and set the timer for 24 minutes. Allow 10 to 15 minutes for the pressure to build. (Cook time: 24 minutes, Pressure build: 10-15 minutes)

Using oven mitts, remove the bowl of rice from the pressure cooker. Let it cool slightly before stirring in the chopped cilantro and lime juice. (Prep time: 5 minutes)

If desired, set the pressure cooker to Saute mode on medium heat. Cook the pork and salsa verde sauce until it has thickened to your liking (8-10 minutes). (Cook time: 8-10 minutes)

Divide the cooked rice evenly among the 6 storage containers. Spoon the pork and sauce generously over the rice. Refrigerate until ready to serve.

For optimal flavor, marinate the pork with the spices for at least 30 minutes before cooking.
If you prefer a spicier dish, use a hotter variety of salsa verde or add a pinch of cayenne pepper to the pork.
To prevent the rice from sticking to the bowl, you can lightly grease it with cooking spray before adding the rice and water.
