While the patties are grilling, arrange the flour tortillas nearby, reducing the heat under the tortillas to medium-low. Sprinkle Cheddar and Colby-Jack cheese evenly over the tortillas. Continue cooking the patties until they are cooked through to an internal temperature of 160°F (70°C), about 5 minutes more. Simultaneously, cook the tortillas until the cheese is fully melted and bubbly, approximately 2 to 4 minutes. (Cook time: 12-14 minutes)

Carefully transfer the cheese-covered tortillas from the grill. Spread a generous amount of the chilled Southwest sauce onto the cheese-covered side of four tortillas. Top each with shredded lettuce, picante sauce, and a juicy burger patty. Finish by placing the remaining cheese-covered tortillas, cheese-side down, on top of the patties to create a quesadilla burger. Serve immediately and enjoy!

For an extra layer of flavor, consider adding a thin layer of refried beans or black bean salsa to the tortillas before adding the cheese.
