Follow The Directions

In a small saucepan, combine the red wine, butter, garlic powder, poultry seasoning, sage, lemon juice, and hot pepper sauce (if using). (2 minutes)

Use a brush to generously baste your chicken, game hens, or turkey during the last 30-40 minutes of cooking, every 10 minutes, until the skin is golden brown and crispy and the internal temperature reaches a safe level.

For a richer flavor, use a full-bodied red wine.
Adjust the amount of hot pepper sauce to your liking.
This baste can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat gently before using.
