For a nuttier flavor, try using melted butter instead of vegetable oil. Fresh saskatoon berries can be used when in season. If using fresh berries, reduce the milk by 2 tablespoons. For a vegan version, substitute the egg with flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 5 minutes). Muffins are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 2 days or frozen for longer storage.
