Follow The Directions

01

Step
10 mins

Rehydrate the Sun-Dried Tomatoes: Place the sun-dried tomatoes in a heatproof bowl and pour the boiling water over them. Let them steep for 10 minutes to soften. (Prep time: 10 minutes)

02

Step
15 mins

Prepare the Tomatoes: Remove the softened sun-dried tomatoes from the water with a slotted spoon, reserving the flavorful water. Coarsely chop the tomatoes. (Prep time: 5 minutes)

03

Step
5 mins

Steam the Vegetables: Pour the reserved sun-dried tomato water into a saucepan and bring to a simmer. Place the chopped sun-dried tomatoes, zucchini, yellow squash, and sweet onion in a steamer basket. Set the basket over the simmering water. (Prep time: 5 minutes)

04

Step

Cook the Medley: Cover the saucepan and steam the vegetables until they are tender-crisp, about 12-15 minutes. Discard the remaining water in the saucepan. (Cook time: 12-15 minutes)

05

Step

Finish and Serve: Transfer the steamed vegetable medley to a serving bowl. Add the butter, sugar, pepper, and salt to taste. Gently toss until the butter is melted and the vegetables are evenly coated. Serve immediately.

For a richer flavor, use oil-packed sun-dried tomatoes and reserve a teaspoon of the oil to drizzle over the vegetables before serving.
Adjust the amount of sugar and salt to your preference. A pinch of red pepper flakes can add a pleasant warmth.
Fresh herbs like basil or thyme can be added at the end for an extra layer of flavor.
If you don't have a steamer basket, you can use a metal colander set inside a pot with a tight-fitting lid.

I didn't have sweet onion on hand, so I used a shallot instead. It worked out perfectly!

I found that 12 minutes was the perfect steaming time for my vegetables. They were tender but still had a little bite.

Next time, I think I'll try adding a pinch of red pepper flakes for a little heat.

I used vegetable broth instead of water, as suggested, and it added a nice depth of flavor.
