In a blender, combine half of the crushed pineapple with the chicken broth, orange juice, quartered red onion, white vinegar, lime juice, chipotle pepper (and 1 teaspoon of its adobo sauce), minced garlic, chili powder, salt, cumin, garlic salt, black pepper, onion powder, and dried oregano. Puree until smooth. (10 minutes)

Pour the vibrant pineapple-chili mixture over the pork loin in the slow cooker. Add the remaining crushed pineapple and frozen corn. (2 minutes)

Cover and cook on Low for 8 hours, or until the pork is incredibly tender and easily shredded. (8 hours)

Once cooked, shred the pork directly in the slow cooker using two forks. Allow the shredded pork to warm in the sauce for an additional hour to absorb even more flavor. (1 hour)

For an extra layer of flavor, consider searing the pork loin in a hot pan before adding it to the slow cooker. This will create a beautiful crust and enhance the overall taste.
Adjust the amount of chipotle pepper to your preference. If you prefer a milder flavor, use only half a pepper or remove the seeds.
Serve the Tacos al Pastor on warmed corn tortillas with your favorite toppings, such as chopped fresh cilantro, crumbled queso fresco, diced red onion, a squeeze of lime juice, or a dollop of sour cream.
