For an extra layer of flavor, try adding a pinch of red pepper flakes to the marinade. If you don't have lemongrass paste, you can substitute with 2 tablespoons of finely minced fresh lemongrass. These chicken thighs are also delicious when cooked in a cast-iron skillet on the stovetop. Make sure the grill is hot before adding the chicken thighs.
