Divide the mixture into twelve equal portions (about 1/4 cup each). With slightly damp hands, roll each portion into a log-shaped oval. Place the formed kebabs on a baking sheet lined with parchment paper. (10 minutes)

Grill the kebabs over indirect heat, turning occasionally to ensure even cooking, until they are no longer pink in the center and an instant-read thermometer inserted into the thickest part registers at least 165°F (74°C). (25-30 minutes)

For extra flavor, consider adding a pinch of cumin or sumac to the mixture.
Serve these kebabs with a dollop of Greek yogurt, a sprinkle of fresh mint, and a side of warm pita bread or rice.
If you don't have a grill, you can bake the kebabs in a preheated oven at 375°F (190°C) for about 20-25 minutes, or until cooked through.
To prevent sticking, lightly oil your hands before forming the kebabs.
