Drain the Cucumber: Place the grated cucumber in a fine-mesh strainer. Allow it to drain, pressing occasionally to remove excess moisture, for 1 to 2 hours. (1-2 hours)

Combine and Chill: In a mixing bowl, gently combine the drained yogurt, drained cucumber, fresh dill, lemon juice, and minced garlic. Season with salt and freshly ground black pepper to taste. Cover the bowl and refrigerate for a minimum of 2 hours to allow the flavors to meld and deepen. (2 hours)

For an extra layer of flavor, try grilling the garlic cloves before mincing them. This will impart a smoky sweetness to the tzatziki.
If you prefer a thicker consistency, drain the yogurt for a longer period of time.
Taste and adjust the seasonings before refrigerating. A little extra lemon juice or garlic can make all the difference.
Serve chilled with grilled meats, vegetables, pita bread, or as a refreshing accompaniment to your favorite Mediterranean dishes.
