Transfer the batter to a piping bag or a zip-top bag with a corner snipped off. Pipe the batter into the prepared mini doughnut pan, filling each cavity about two-thirds full. (7 minutes)

While the doughnuts are baking, prepare the glaze: In a small bowl, whisk together the confectioners' sugar, soy milk, and vanilla extract until smooth. Add more soy milk, a teaspoon at a time, until the desired consistency is reached. (5 minutes)

Remove the doughnuts from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely. (10 minutes)

Once the doughnuts are cool, dip them into the glaze and place them back on the wire rack to allow the excess glaze to drip off. Decorate with sprinkles or other toppings, if desired. (10 minutes)

For a richer flavor, try using melted coconut oil instead of vegetable oil.
Experiment with different extracts and spices in the glaze, such as almond extract, lemon zest, or cardamom.
