Prepare the Grill: Preheat an outdoor grill or grill pan to medium-high heat (400 to 450 degrees F/200 to 230 degrees C) and lightly oil the grate. (5 minutes)

Make the Sauce: In a small bowl, combine the mayonnaise, red onion, ketchup, sherry vinegar, capers, parsley, thyme, and sugar. Mix well and set aside. (5 minutes)

Prepare the Patties: In a large bowl, gently mix the ground beef with 3/4 teaspoon of kosher salt and 1/2 teaspoon of ground black pepper until just combined. Avoid overmixing. Form the mixture into 12 equal-sized meatballs, then slightly flatten them into patties. Place the patties on a baking sheet, drizzle with olive oil, and season both sides with the remaining 3/4 teaspoon of salt and 1/2 teaspoon of black pepper. (10 minutes)

Grill the Patties: Place the patties on the preheated grill, uncovered, and grill for 3 minutes. Flip the patties, top each with a quartered piece of cheddar cheese, and continue grilling, uncovered, until the cheese is melted and the beef is cooked through, about 2 minutes more. During the last minute, grill the brioche buns, cut-sides down, until lightly toasted. (6 minutes)

Assemble the Sliders: Spread a small spoonful of the prepared sauce on the bottom half of each toasted bun. Add a grilled patty, a generous pinch of shredded lettuce, a couple of tomato slices, and a few cornichon slices. Top with the other half of the bun and serve immediately. (5 minutes)

For an extra layer of flavor, consider adding a dash of Worcestershire sauce to the ground beef mixture.
If you don't have sherry vinegar, you can substitute it with white wine vinegar or apple cider vinegar.
Feel free to experiment with different types of cheese, such as Gruyere or pepper jack, for a unique twist.
Make sure not to overcook the patties or they will become dry. Use a meat thermometer to ensure they reach an internal temperature of 160°F (71°C).
