Step

In a saucepan, combine water and bouillon cubes. Bring to a boil, then add rice and stir. Reduce heat to low, cover, and simmer for approximately 50 minutes, or until rice is tender and all liquid has been absorbed.

Heat vegetable oil in a stockpot over medium-high heat. Add chopped zucchini and onion; cook until softened but still slightly firm, about 5 minutes. Stir in cumin, oregano, lentils, and 6 cups of water, adding the water gradually. Bring to a gentle boil, then reduce heat and simmer until lentils are tender, about 45-60 minutes, adding more water as needed to maintain desired consistency.

Preheat oven to 375 degrees F (190 degrees C).

Combine the cooked rice and lentil mixture in a large bowl. Season to taste with salt and pepper. Stir in 3/4 of the grated Cheddar cheese. Transfer the mixture to a 9x13 inch baking dish. In a separate bowl, mix the remaining cheese with the bread crumbs, and spread evenly over the top of the casserole.

Bake in the preheated oven until the cheese is melted and bubbly, approximately 10 minutes.

For a richer flavor, try using vegetable broth instead of water and bouillon cubes.
Consider adding other vegetables like diced carrots, celery, or bell peppers to the lentil mixture for added texture and nutrients.
For a crispier topping, toast the breadcrumbs in a dry skillet before mixing them with the cheese.
This casserole can be assembled ahead of time and baked just before serving.
