Place pork loin on a clean work surface. Starting about 1/2 inch from the edge, butterfly the pork loin by carefully slicing horizontally through the center, stopping about 1/2 inch from the opposite edge. Open the loin like a book. Cover the opened loin with plastic wrap and pound to an even 1/4-inch thickness using a meat mallet. This ensures even cooking and a tender result. (15 minutes)

In a large bowl, combine the chopped apples, diced bread, chicken stock, poultry seasoning, seasoned salt, and beaten eggs. Mix well until all ingredients are evenly distributed. (10 minutes)

Spread the apple filling evenly over the flattened pork loin. Carefully roll the loin tightly around the apple filling, starting from one end and ending with the fat cap on top (if present). If the loin is very long, you may cut the stuffed pork loin in half for easier handling. Place the stuffed pork loin on the prepared wire rack. (10 minutes)

Bake in the preheated oven until the pork is no longer pink in the center and an instant-read thermometer inserted into the thickest part of the loin registers at least 145 degrees F (63 degrees C), approximately 1 hour. Let rest for 10 minutes before slicing and serving. (70 minutes)

For a richer flavor, try browning the pork loin in a skillet before baking.
Use a variety of apples for a more complex flavor profile.
Add dried cranberries or chopped walnuts to the apple filling for added texture and flavor.
