Follow The Directions

01

Step
2 mins

In a large bowl, whisk together the sugar and flour until well combined. (2 minutes)

02

Step
3 mins

In a separate bowl, whisk together the egg yolks and water until light and fluffy. This may take 2-3 minutes with an electric mixer or a bit longer by hand.

03

Step
1 mins

Gradually add the sugar and flour mixture to the egg yolk mixture, whisking constantly until a smooth batter forms. Ensure there are no lumps.

04

Step
6 mins

In a medium saucepan, heat the milk over medium heat until it just begins to simmer, being careful not to scald it. (5-7 minutes)

05

Step
1 mins

Slowly pour the hot milk into the egg yolk mixture, whisking constantly to temper the eggs and prevent them from scrambling.

06

Step
6 mins

Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until the pudding thickens and comes to a gentle boil. This should take about 5-7 minutes. Continue to cook for 1 minute more, stirring continuously.

07

Step
1 mins

Remove the saucepan from the heat and stir in the sliced bananas and vanilla extract. Mix well to distribute the bananas evenly throughout the pudding.

08

Step
13 mins

In a glass bowl or trifle dish, create layers by alternating vanilla wafers and banana pudding. Begin and end with a layer of vanilla wafers. Arrange banana slices along the sides of the glass for a decorative touch. (10-15 minutes)

09

Step
2 hrs

Cover the bowl with plastic wrap, pressing it gently onto the surface of the pudding to prevent a skin from forming. Refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the pudding to set completely.

For a richer pudding, substitute half-and-half or heavy cream for some of the milk.
If you prefer a smoother pudding, use a blender or immersion blender to blend the banana slices into the pudding after cooking.
To prevent the bananas from browning, toss them with a little lemon juice before adding them to the pudding.
Feel free to use more or less bananas according to your preference.
For an extra touch of elegance, top the pudding with whipped cream and a sprinkle of crushed vanilla wafers just before serving.
