In a separate bowl, blend the remaining 1/4 cup of softened butter with brown sugar, cinnamon, chopped pecans, and raisins to create the filling. Set aside. On a lightly floured surface, roll one dough ball into a 9-inch circle, ensuring the remaining dough stays refrigerated to maintain its chill. (Prep time: 15 minutes)

Evenly spread 1 tablespoon of orange marmalade over the rolled-out circle. Gently press 1/3 of the nut mixture into the marmalade-covered dough. Using a sharp knife or pizza cutter, cut the circle into 16 equal wedges. Start rolling each wedge tightly from the wide end towards the point. Place each rolled cookie, point-side down, onto the prepared baking sheet. Repeat this process with the remaining dough. In a small bowl, whisk the egg white with water to create an egg wash. Brush the egg wash onto each cookie for a golden finish. (Prep time: 30 minutes)
