For best results, use very fresh eggs for poaching. The fresher the eggs, the less likely they are to spread out in the water. If you're making this for a crowd, you can poach the eggs ahead of time and store them in a bowl of ice water. When ready to serve, gently reheat them in warm water for a minute or two. Feel free to adjust the amount of cayenne pepper to your liking. A little bit adds a nice kick, but you can omit it entirely if you prefer.
