Feel free to substitute the Cheddar cheese with Gruyere, Monterey Jack, or a blend of your favorite cheeses.
If you don't have brioche bread, challah or even regular white bread will work well. Just make sure to remove the crusts.
The casserole can be assembled up to 24 hours in advance. Just keep it refrigerated until ready to bake.
