Layer: Arrange half of the tortilla pieces in a single layer at the bottom of the prepared baking dish. Top with half of the chicken mixture, spreading it evenly. Sprinkle with 1 cup of the shredded Monterey Jack cheese. Repeat these layers, using the remaining tortilla pieces, chicken mixture, and another 1 cup of cheese. (15 minutes)

Bake (Covered): Cover the dish tightly with aluminum foil and bake in the preheated oven for 35 minutes, allowing the flavors to meld and the casserole to heat through. (35 minutes)

Bake (Uncovered): Remove the foil and sprinkle the remaining 2 cups of shredded cheese evenly over the top. Return the dish to the oven and continue to bake until the cheese is melted, bubbly, and just beginning to brown, approximately 10 minutes. (10 minutes)

Serve: Let the casserole cool slightly before cutting into squares. Top each serving with your desired taco toppings and enjoy immediately!

For a spicier kick, use a hot salsa or add a pinch of cayenne pepper to the chicken mixture.
Feel free to substitute ground turkey or beef for the chicken. Brown the meat and drain off any excess fat before adding it to the salsa mixture.
If you don't have corn tortillas on hand, flour tortillas will also work. Cut them into smaller pieces to fit in the baking dish.
Prepare the casserole ahead of time and store it in the refrigerator until ready to bake. You may need to add a few extra minutes to the baking time if starting with a cold casserole.
Leftovers can be stored in the refrigerator for up to 3 days. Reheat in the microwave or oven until warmed through.
