Follow The Directions

01

Step
5 mins

In a medium bowl, combine the chicken pieces with salt, pepper, and minced garlic. Sprinkle the flour evenly over the chicken, tossing to ensure each piece is lightly coated. (5 minutes)

02

Step
10 mins

Heat the vegetable oil and butter in a large skillet over medium heat until the butter is melted and the pan is shimmering. Shake off any excess flour from the chicken. Reserve the remaining flour. Carefully place the chicken pieces in the hot skillet, ensuring not to overcrowd the pan. Brown the chicken on all sides until golden. Remove the chicken from the skillet and set aside to keep warm. (10 minutes)

03

Step
5 mins

In the bowl where the chicken was floured, whisk a small amount of the chicken broth into the reserved flour until a smooth slurry forms. Gradually pour this slurry into the skillet with the drippings, stirring constantly to prevent lumps. Add the remaining chicken broth and bring the mixture to a boil, stirring occasionally. (5 minutes)

04

Step
15 mins

Reduce the heat to low and return the browned chicken pieces to the skillet. Simmer gently, allowing the chicken to cook through and the sauce to thicken, about 10-15 minutes. Stir occasionally to prevent sticking. (15 minutes)

05

Step

Taste the gravy and adjust the seasoning with additional salt and pepper, if needed. Serve hot over your choice of sides.

For a richer flavor, consider using bone-in, skin-on chicken thighs. Increase the cooking time accordingly.
Add sliced mushrooms or chopped onions to the skillet after browning the chicken for a more complex gravy.
A splash of dry white wine or a squeeze of lemon juice can brighten the flavor of the gravy.
If the gravy becomes too thick, thin it out with a little extra chicken broth. If it's too thin, simmer for a few more minutes, uncovered.
