For a smoother filling, use a potato ricer or food mill to mash the potato flesh. Add a dash of hot sauce or a pinch of cayenne pepper to the filling for a spicy kick. To prevent discoloration, toss the scooped potato flesh with a squeeze of lemon juice before mashing.
