Step

Immerse rice noodles in a bowl filled with hot water. Gently separate the noodles using a fork or your hands to prevent clumping. Allow them to soak until softened, approximately 45 minutes.

While the noodles are soaking (around the 30-minute mark), prepare the sauce. In a separate bowl, whisk together the oyster sauce, sugar, rice vinegar, and lime juice until the sugar is fully dissolved and the mixture is smooth. Set aside.

Heat a wok or large skillet over medium-high heat. Add enough canola oil to generously coat the bottom. Once the oil is hot, add the sliced onion, chopped shallot, and minced garlic. Sauté until fragrant and slightly softened, about 2-3 minutes. Add the thinly sliced chicken and bell pepper strips. Cook, stirring frequently, until the chicken is no longer pink, approximately 5-7 minutes. Push the chicken mixture to one side of the wok.

Pour the lightly beaten egg into the empty side of the hot wok. Allow it to cook undisturbed until it begins to set, about 1-2 minutes. Flip the egg and cook for another 1-2 minutes until fully set. Use a fork to break the egg into smaller pieces and then stir it into the chicken mixture. Add the reserved sauce and torn basil leaves.

Drain the soaked noodles thoroughly and add them to the wok with the chicken and sauce. Cook and stir continuously until the noodles are heated through and evenly coated with the sauce, about 2-3 minutes. Serve immediately.

For an extra layer of flavor, consider adding a tablespoon of fish sauce to the sauce mixture.
Feel free to customize the level of spice by adding a pinch of red pepper flakes or a finely chopped Thai chili to the wok along with the garlic and shallots.
If you don't have fresh basil, you can substitute with dried basil, but use only about 1 teaspoon as the flavor is more concentrated.
Other protein such as beef, pork, shrimp, or tofu can be used as alternative to chicken.
