In a separate bowl, whisk together the eggs, salt, and pepper. Reduce the heat under the skillet to medium. Pour the egg mixture into the hot skillet and cook, stirring gently, until the eggs are set but still slightly moist (3-5 minutes). Transfer the cooked eggs to a plate.

Warm the tortillas lightly, either in a dry skillet or microwave, to make them more pliable. Lay the warmed tortillas on a clean work surface. Evenly distribute the cooked potatoes, sautéed onion, scrambled eggs, crumbled bacon, shredded Cheddar cheese, sliced avocado, salsa, and sour cream in a line across the center of each tortilla. Fold in the sides of the tortilla, then roll the bottom edge tightly over the filling, creating a burrito.

For optimal flavor, use freshly cooked bacon rather than pre-cooked bacon bits.
