Follow The Directions

01

Step
20 mins

Place potatoes in a large pot and cover with cold, lightly salted water. Bring to a boil over high heat. Once boiling, reduce heat to medium-low and simmer until potatoes are fork-tender, about 15-20 minutes.

02

Step
5 mins

While potatoes are cooking, preheat your oven to 375 degrees F (190 degrees C). Grease a 9x13 inch glass baking dish with butter or cooking spray.

03

Step
2 mins

In a large bowl, combine the hot milk, softened cream cheese, 1/3 cup of the chopped green onions, butter, lightly beaten egg, minced garlic, salt, and pepper. Set aside.

04

Step
1 mins

Once the potatoes are tender, drain them well and return them to the pot. Mash the potatoes thoroughly until smooth.

05

Step
2 mins

Pour the milk and cream cheese mixture over the mashed potatoes. Continue mashing until everything is well combined and the mixture is smooth and creamy. Add more milk if needed to reach your desired consistency.

06

Step
1 mins

Transfer the mashed potato mixture to the prepared baking dish. Sprinkle the top evenly with the shredded Cheddar cheese and the remaining green onions.

07

Step
40 mins

Bake in the preheated oven for 35-40 minutes, or until the casserole is heated through and the cheese is melted and lightly browned.

For an extra layer of flavor, try roasting the garlic before adding it to the mashed potatoes. Simply wrap the garlic cloves in foil with a drizzle of olive oil and roast at 400°F (200°C) for 30-40 minutes, or until soft and fragrant. Let cool slightly before squeezing the roasted garlic into the milk mixture.
Feel free to experiment with different types of cheese. Gruyere, Monterey Jack, or even a smoked Gouda would all be delicious additions.
This casserole can be assembled ahead of time and stored in the refrigerator for up to 24 hours. Add about 10-15 minutes to the baking time if baking from cold.
