Cook until browned on all sides and cooked through (approximately 10-12 minutes). Ensure an internal temperature of 160°F (71°C). Transfer the cooked meatballs to a warm plate and cover with foil to keep warm. Reserve drippings in the skillet.

Melt 1/3 cup butter in the skillet with the reserved drippings over medium heat. Whisk in flour and cook until the flour is dissolved and turns a light golden brown (approximately 5 minutes). Gradually whisk in vegetable broth, beef broth, 1 cup cream, soy sauce, and Dijon mustard. Bring to a simmer, then season with salt and pepper to taste. Stir to combine and simmer until the gravy has thickened to your desired consistency (approximately 5-7 minutes).
