For a richer flavor, try toasting the walnuts before adding them to the batter. If you don't have canola oil, vegetable oil works well as a substitute. To prevent the top of the bread from browning too quickly, tent it with foil during the last 20 minutes of baking. This bread freezes beautifully! Wrap tightly in plastic wrap and then foil for best results.
