Heat a large skillet over medium-high heat. Cook and stir turkey in the hot skillet until browned and crumbly (5-7 minutes). Drain and discard any excess grease.

In a slow cooker, combine the browned turkey, enchilada sauce, black beans, quinoa, diced tomatoes and chiles, water, corn, salsa, onion, green bell pepper, chili powder, garlic, and cumin.

Cook in the slow cooker on High until the quinoa is tender and the flavors have melded together (approximately 4 hours).

Stir in the shredded Mexican cheese blend and chopped fresh cilantro just before serving.

For a spicier kick, add a pinch of cayenne pepper or use a hot enchilada sauce.
To make this dish vegetarian, substitute the ground turkey with lentils or crumbled tofu.
This stew is great served with a dollop of sour cream or Greek yogurt and a sprinkle of extra cilantro.
Feel free to adjust the amount of water to achieve your desired stew consistency.
If you don't have a slow cooker, you can simmer this stew on the stovetop over low heat for about 45-60 minutes, or until the quinoa is cooked.
