Follow The Directions

01

Step

Prepare Ingredients: Gather all ingredients for a smooth cooking process. (Prep time: 5 minutes)

02

Step

Render Bacon: In a 6-quart Dutch oven over medium heat, cook bacon until crisp. (Cook time: 5 minutes). Transfer bacon to a paper towel-lined plate, reserving 1 tablespoon of bacon drippings in the pot.

03

Step

Sauté Vegetables: Add onion, celery, green pepper, garlic, salt, black pepper, thyme, and cayenne pepper to the Dutch oven. Cook, stirring occasionally, until vegetables are tender and fragrant. (Cook time: 5-7 minutes).

04

Step

Simmer Peas: Add frozen black-eyed peas and chicken broth to the pot. Bring to a boil, then reduce heat, cover, and simmer until peas are tender but not mushy. (Simmer time: 20 minutes).

05

Step

Reserve Liquid: Drain the peas and vegetables, reserving the flavorful cooking liquid.

06

Step

Combine and Serve: Stir in cooked rice, cooked bacon, and enough reserved liquid to achieve a saucy consistency. Season to taste with additional salt, if needed. Garnish with chopped green onions and serve immediately.

For a vegetarian version, omit the bacon and use 1 tablespoon of olive oil to sauté the vegetables. Consider adding a smoked paprika to enhance the smoky flavor.
If you don't have long grain rice, medium or short grain will work in a pinch. Adjust the amount of liquid added accordingly.
For a richer flavor, use homemade chicken broth or vegetable broth instead of store-bought.

I added a bay leaf while simmering the peas, and it gave it a wonderful depth of flavor.
