Pour 1 cup of water into a multi-functional pressure cooker (such as Instant Pot®). Set an elevated trivet inside. (1 minute)

In a small, heat-resistant bowl, combine the oats, remaining 1/2 cup of water, coffee creamer, 1/2 teaspoon of cinnamon sugar, and salt. Place the bowl onto the trivet. (2 minutes)

Close and lock the lid of the Instant Pot. Select the porridge setting according to the manufacturer's instructions; set the timer for 5 minutes. Allow 10 to 15 minutes for the pressure to build. (15 minutes)

While the oatmeal cooks, melt the butter in a skillet over medium-high heat. Add the chopped pecans and sprinkle with the remaining pinch of cinnamon sugar. Toast the pecans until the butter browns and the nuts are fragrant, about 1 minute, depending on the size of the pecan pieces. Remove from heat and set aside. (5 minutes)

Once the cooking cycle is complete, release the pressure using the natural-release method according to the manufacturer's instructions, approximately 12 minutes. Carefully release any remaining pressure using the quick-release method, about 5 minutes. Unlock and remove the lid. (17 minutes)

Spoon the oatmeal into two bowls and top with equal amounts of the toasted butter pecans. Serve immediately and savor the delightful combination of flavors and textures. (1 minute)

For a richer flavor, consider using brown butter instead of regular unsalted butter for toasting the pecans.
Adjust the amount of coffee creamer to your preference for sweetness and butter pecan flavor.
If you don't have butter pecan-flavored coffee creamer, you can substitute with regular creamer and a teaspoon of butter pecan extract.
