Follow The Directions

Preheat oven to 400 degrees F (200 degrees C). Line two pie dishes with the thawed pie crusts. (5 minutes)

In a microwave-safe bowl, combine the frozen corn, peas, and carrots. Cover with plastic wrap and microwave until tender, approximately 2 to 6 minutes. (8 minutes)

In a large bowl, gently stir together the microwaved vegetables, diced turkey, gravy, green beans, bacon bits, parsley, sage, thyme, and black pepper. Ensure all ingredients are well combined. (5 minutes)

Evenly divide the turkey mixture between the two prepared pie dishes. Top each pie with the remaining pie crusts. Trim the pastry edges to fit, then crimp and pinch the edges to seal. Cut four slits in the top of each pie to allow steam to escape. (15 minutes)

In a small bowl, whisk together the beaten egg and water. Brush the egg mixture evenly over the top of each pie crust. This will create a beautiful golden-brown finish. Fold a strip of aluminum foil around the outer edges of each pie crust to prevent over-browning. (5 minutes)

Bake in the preheated oven until the crust is golden brown and the filling is heated through, about 45 minutes. (45 minutes)

Remove from oven and let cool for 5 to 10 minutes before serving. This allows the filling to set slightly and prevents burning your mouth! (8 minutes)

For an extra layer of flavor, consider adding a tablespoon of butter to the vegetable mixture before microwaving.
If you prefer a thicker gravy, whisk a teaspoon of cornstarch with a tablespoon of cold water and stir it into the turkey mixture before filling the pies.
Feel free to customize the vegetables to your liking. Diced celery, mushrooms, or roasted sweet potatoes would all be delicious additions.
To make individual pot pies, use ramekins instead of pie dishes and adjust baking time accordingly.
