For an even richer chocolate flavor, try using dark cocoa powder. Be careful when pouring the boiling water; pour slowly and evenly to avoid disturbing the sugar mixture on top. If the top of the cake starts to brown too quickly, you can loosely cover it with foil during the last 10-15 minutes of baking. This cake is best served warm, but it can also be stored in the refrigerator for up to 3 days. Reheat gently before serving.
