Cook, stirring occasionally, until the chicken is cooked through and no longer pink in the center, approximately 5-10 minutes. Remove the chicken and onion mixture from the skillet and set aside.

Cook the Farro: Pour the chicken broth into the skillet and bring to a boil over medium-high heat. Stir in the rinsed farro. Once boiling, reduce the heat to low, cover the skillet, and simmer until most of the liquid has been absorbed and the farro is tender, about 15-20 minutes.

Combine and Simmer: Return the cooked chicken and onion mixture to the skillet with the farro. Stir in the can of Italian-style diced tomatoes (with their liquid), baby spinach, dried basil, and dried parsley. Season generously with salt and freshly ground black pepper to taste. Reduce the heat to low, cover the skillet, and simmer for an additional 5-7 minutes, or until the spinach has wilted and the flavors have melded together.

Rest and Serve: Remove the skillet from the heat and let it stand, covered, for 3-5 minutes before serving. This allows the flavors to further develop and the farro to fully absorb any remaining liquid. Serve immediately, topped with freshly grated Parmesan cheese. Offer additional Parmesan at the table.

For a richer flavor, use homemade chicken broth or stock.
Feel free to add other vegetables such as bell peppers, zucchini, or mushrooms.
If you don't have Italian-style diced tomatoes, you can use regular diced tomatoes and add a pinch of Italian seasoning.
For a vegetarian version, omit the chicken and add a can of drained and rinsed cannellini beans or chickpeas along with the spinach.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
