For a more intense peppermint flavor, add an extra 1/4 teaspoon of peppermint extract. If you don't have vegetable shortening, you can use all butter, but the texture might be slightly different. Feel free to experiment with different types of chocolate chips, such as dark chocolate or semi-sweet. Store the cooled cookies in an airtight container at room temperature for up to 5 days.
